Chicken Salad Sandwich
Ideal for Healthy Eating, and Blood Type A Diets
Anyone who knows me – or anyone who has even crossed my path in the last several years – might be inclined to call me a Yo-yo dieter. I’m not sure I’d go that far in my non-existent autobiography, however I have been known to switch up my eating habits now and then. *ahem* (you can read more about that here). I’ve recently been reading about Blood Types and how we should be eating in accordance with our specific type. I’m type A, so I do best on a mostly vegetarian diet apparently, with fish being beneficial and chicken being neutral (meaning I can eat it occasionally as long as my body tolerates it). Well, I love me some chicken, so my body better fall in line. I was messing around with my generic chicken salad recipe that my family loves, and I came up with this healthier version that’s perfect for Type A people – or anyone who wants to eat healthier really – it’s marvelous! Healthy & Refreshing Chicken Salad Sandwich Recipe
Ingredients
- 1 cup Rotisserie Chicken (or any cooked chicken)
- 3-4 tbsp Mayo I prefer homemade, but store brand works fine
- 1 tbsp Olive Oil
- Thinly Sliced Peeled Cucumber
- 3 tbsp Hemp Seeds
- Everything But The Bagel Seasoning
- Dill Weed
- Chives
- Salt optional
- Ezekial 4:9 Bread
Instructions
- Mix the chicken with hemp seeds, mayo, olive oil & spices.
- Spread on your bread.
- Add Thinly Sliced Cucumber
- Add extra Dill Weed & EBTB Seasoning
- Enjoy!
